ALPHA TO OMEGA PROCESS
GROWTH
Gradual, slow, silent, constant transformation. It is provided by nature and we just observe the ecosystem's work. Ours is to focus and understand it, live by it. We avoid any alteration / intervention to the environnment, any intensive change or agricultural "method" ("permaculture" / "regeneration" etc) as it is an opposition to the natural evolving process.
In our land several other indigenous plants exist: Lavenders, wild oregano, mountain tea, prickly pears, wild savory, natural mint, wild anemones, wild tulips, natural prockly pears, natural chamomile, thyme, white beets, natural milk-thistles, wild grapes, heathers, sedges, rosemaries, wild hibiscus, wild jasmines, natural thyrsus, natural asparagus, arbutus etc, We don’t harm them, we let them grow together with the olive trees. The same applies with the fauna / wild animals. We never interfere, allowing them to establish their own equilibrium. Wild rabbits, wild bees, wild birds, wild hedgehogs, wild turtles, wild boars, wild foxes abd all sorts of wild animals they are all free to live at will.
Our Wild olive trees feel being at a natural Spartan environment, not a factory plant. How we know it? We feel the same way.

HANDPICK HARVEST
At autumn, when the time is right, olive fruits are harvested by hand and headed directly to our press in order to implement our world pioneering, designed and built by us, "Alpha to Omega" process (within our own Estate & Production Unit) for our World Leading in Nutrients (Polyphenols, Oleocanthal, Omega 3, Omega 6, Omega 9, Sterols, Vitamins, Squalene etc) Medicinal Wild Olive Oil ®. NOT EVERY OLIVE REACHES THE OLIVE PRESS. WE CONDUCT A THOROUGH "SORTING" SO AS TO RETAIN ONLY THE BEST OLIVE DRUPES AND DISCARD (=>back to the land) ANY THAT DONT MEET OUR STRICT CRITERIA.

COLD PRESSING
Wild olives are immediately headed after harvest to be coldly pressed in our own World Pioneering Unit, below 22C (71F), under suitable conditions, carefully monitored. Within the hour they become olive oil. The procedure is fragile and especifically designed & built to preserve the beneficial nutrients. Many factors are observed simultaneously: Time, calibration of the equipment, temperature, air, sunlight, weather conditions etc, can affect the quality drastically. We notice everything consciously and perform minimal small changes to the olive paste.

COLD BOTTLING & COLD STORING
The same applies to "Cold Standardize / Bottling" which takes place immediately after Cold Pressing. We are the only company in the world that puts on the label of each bottle the mg/Kg of Polyphenols, Oleocanthal, Omega 3, Omega 6, Omega 9, Vitamin E, Sterols & Squalene. To achieve that we invented a new, pioneering, standardize process that keeps the nutrients unharmed. The "cold" storing takes place immediately after bottling in our storage in our "World Pioneering Ancient Forest & Environment Preservation Estate & Unit", designed and built by us in order to protect the nutrients from air, light and minor heat. Each bottle is thoroughly supervised and inspected & adequately cold stored
IMPORTANT NOTICE
We only use glass bottles (sizes: 10ml, 30ml, 50ml, 90ml, 100ml, 200ml, 250ml, 500ml, for 100% preservation of the nutrients & simultaneous practicality, depending on the needs of the customer) or inox airtight tanks for our products and processes, the only two materials absolutely inert with olive oil and 100% recyclable. Any other material such as tin, metal, plastic, "compostable", "pod", "seaweed", "biodegradable" etc is not inert and contaminates the olive oil with harmful for the human health elements.

Samples of our Limited Production / Reserve are always measured "on the spot" while a few others find their way to Universities and other certified analytical laboratories in the European Union and the USA.
