At autumn, when the time is right, olive fruits are harvested by hand and headed directly to the press in order to implement our world pioneering, designed and built by us, "Alpha to Omega" process for our World Leading in Polyphenols Medicinal Wild Olive Oil.
Wild olives are coldly pressed below 27C (80F), under suitable conditions, carefully monitored. Within the hour they become olive oil. The procedure is fragile and especifically designed & built to preserve the beneficial nutrients. Many factors are observed simultaneously: Time, calibration of the equipment, temperature, air, sunlight, weather conditions etc, can affect the quality drastically. We notice everything consciously and perform minimal small changes to the olive paste.
The same applies to standardize. We are the only company in the world that puts on the label of each bottle the mg/Kg of Polyphenols, Omega 3, Omega 6, Omega 9 & Vitamin E. To achieve that we invented a new, pioneering, standardize process that keeps the nutrients unharmed. The "cold" bottling takes place at our unit, designed and built by us in order to protect the nutrients from air, light and minor heat. Each bottle is thoroughly supervised and inspected.
A sample of the final product is always measured “on the spot” while a few others find their way to Universities and other certified analytical laboratories in the European Union and the USA.
The product is stored away from sunlight, heat, air, moisture, anything that can harm the nutrients.
